A European chocolatier classic, this Florentine cookie will delight anybody who tries it!

Method:

1. Preheat oven to 300 degrees F.
2. Line cookie sheet with parchment paper.
3. Spray with light non-stick cooking spray.
4. Mix egg white, almonds, confectioners sugar, sea salt, orange zest and lemon zest in a mixing bowl.
5. Scoop large tablespoons of the mixture evenly spaced on the baking sheet.
6. Use a fork to flatten each cookie.
7. Bake until the cookies are golden brown accross the top and bottom (about 10-15 minutes).

Remove from oven and allow cookies to cool.

Place cookies on a cooling rack until they are completely crisp.

10. Once the cookies have cooled, melt or temper your chocolate according to the included directions.
11. Dip each cookie into melted chocolate.

Place on Heavy Weight Dipping Sheets and refrigerate until set (approximately 10-15 minutes)

Store in an airtight container until ready to serve.
