What's the difference between a
chocolate
melter/warmer
and a chocolate tempering machine?
A chocolate tempering machine is fully automated, whereas a chocolate melter/warmer requires you to manually go through the steps to bring up the temperature, then lower the temperature, and then maintain the temperature. When using a melter/warmer, it's absolutely necessary to utilize a chocolate thermometer for temperature accuracy, and you must stir the chocolate.
When using a tempering machine, the machine automatically reads and adjusts the temperature for you and continuously stirs the chocolate.
For small batches of chocolate when making candy or for dipping smaller items, we recommend the ChocoVision or ACMC Tempering Machines. These machines are designed for melting and maintaining small batches of both real chocolate (bringing the chocolate into temper and holding in temper) or compound chocolate (at working temperature). Some people temper their chocolate in the tempering machine, then transfer it to the warmer (below) that holds up to 20 lbs. of chocolate because with economically priced tempering machines their bowls are rather shallow in depth, making it difficult to dip large items such as frozen bananas, ice cream bars or pretzel rods.
For larger batches of chocolate when making candy or for dipping larger items, we have one reasonably priced solution. The Stainless Steel Soup Kettle will melt and hold at temperature for long periods of time.

Double Boiler Insert
We always suggest using a double boiler to melt your Chocoley Chocolate, but if you don't already have one, finding one can be a daunting task.
We were so excited when we found this clever non-stick insert that conveniently will turn just about any 1 to 3 quart pan into a double boiler with an 8 cup capacity (9-1/2" diameter by 4-3/4" height).
